About Me

When I was 16 years old, I decided to become a chef, which was challenging as I was working in a restaurant in Poland where the menu had remained the same for the past 10 years. I have to admit that it was quite boring working there, but looking back on that place, with today’s perspective, it was pretty consistent. After completing 2 years of an Apprenticeship, I was dreaming about big kitchens. When the opportunity came for me to work for an Italian restaurant in central Cracow, called Carllitto, I believed that this was a good step in the right direction. My head chef at the time was Italian and I was running the larder section so I had learnt a lot in regards to pasta production in an Italian kitchen, developed a passion for fresh food and respect for ingredients. However, it still wasn’t what I was looking for, so after working there for almost 8 months I made the decision to leave my home and Poland to follow my ambitions. I ended up travelling to Crete, Greece, to work for the summer season in one of the hotels and remained there for about 6 months, which was great. For the first time in my life I was able to go fishing and started developing a better understanding of the fresh ingredients along with great respect for the quality product.......................To Be Continued
