A summer classic, fresh Greek clams, simply steamed in white wine, garlic and herbs. I will show the process for this dish that comes together so simply. Taking the stock and liquor from the clams and driving those flavours into gently toasted aborio rice. A risotto is about the last ten minutes and I will go through those finishing touches to make your risotto stand out from the crowd.
