Milk Bread 1 ounce Instant Yeast SAF 50 ounces cold milk 50 ounces bread flour 25 ounces cake flour 2oz salt 6.25 ounces of sugar 12.5 ounces soft butter Mix all ingredients gently until a ball forms in mixer at speed 1. Put on speed 2 for 6 minutes. Roll out balls 3 ounce balls and let proof for 30-40 min depending on room temp and humidity. Preheat oven to 400 degrees F. In a small bowl add 1 egg to ¼ cup of water and mix to create egg wash. Very delicately lift each roll and dip in egg wash and then put on a sheet tray with parchment paper or sprayed with cooking oil. Let rolls rest 10 more minutes before placing in oven to bake. Bake for 10-12 minutes or until golden.
