This is a quick & easy Persian inspired dish based on our aubergine & tomato stew which is usually cooked with beef or chicken. In the original recipe you have to fry the aubergines separately and then add them to the stew and let it cook for an hour. sometimes this can be a bit to much for people and they easily skip cooking & trying persian food. So thats why i came up with this recipe. Persian food is not to spicy and the flavours are very subtle. I use less oil in my version & also cook my aubergines with the chicken at the same time, Just to make it slightly healthier. I also use different types of tomatoes depending on my mood!! which you can swap with whatever tomatoes you have in the fridge. If u don’t like aubergine, use zucchini instead.
